I know this is a mjor liability issue and all but is this a feasible thing to work on?
Two persons lancing eachother is one form but thier is another.
The jousting I am mostly refering to is the lancing a ring type. Could be an interesting sport entertainment for guests and 'live-ins'.

Yeah, i know. The big thing is LIABILITY.
It would be on PK lands, therefore, partially liable

find an adjacent field for the patrons jousting and try something like this
4 cables strung out over field mock horses put on 2 of them. patron gets on mock horse, mock horse goes down the field the 2 mock horses go straight at each other, but no more than 5 miles an hour
if wanted we could safety nets up under the horses just for liability reasons. of course they have to sign waivers before they get on.
